ONION SOUP – French style (cooking time 30mins)

Ingredients for 4 portions:

  • 4 slices of bread
  • 500g onions = 17.63oz
  • 2 cloves of garlic
  • 40g butter = 1.41oz = 2 tablespoons
  • salt and black pepper (to your taste)
  • 20g flour =0.70oz 1/½ tablespoons
  • 1 liter broth (or veggie broth) 33.81oz = 4 cups
  • 1/4 liter white wine = 8.45oz = 1 cup
  • 100g cheese (I use gruyere) = 3.38oz

Cut the onions into rings. Cut garlic. Put butter in a pot and glaze onions and garlic in it.

When they are glazed add flour and let it have another minute

After that add the broth and wine and cook it for 20mins on low temperature.

season with salt and pepper

after 20mins you can eat the soup already. BUT …… you want cheese on top with toast right?

put soup in a cup/form (fireproof), toast one slice of bread and put it on top. Then slice some cheese and put it on toast. Place in oven on high (250°C/ 480°F) temperature. Depends on your taste how you like the cheese. 🙂

 


 

VEGGIE SOUP – (cooking time 40mins)

Ingredients for 4 portions:

  • 800g veggies (peeled and cleaned they weight less)
  • 3 carrots
  • 1/4 of celery
  • 1 leek
  • 1-2 parsley roots
  • 1 onion
  • salt and black pepper (to your taste)
  • 1 liter water = 4 cups
  • butter or whichever oil you prefer
  1. clean veggies and cut all into cubes except for the onion
  2. cut onion into rings
  3. use a bigger pot, put butter in and glaze onions
  4. add other veggies by and by and let them glaze a bit too
  5. then add 1 liter (4 cups) water
  6. let cook on low heat for 40mins
  7.  now add spices – pepper and salt. You can also add garlic or whatever taste you prefer
  8.  if you want to add more than that, feel free to add chicken strips or barley (yummm)

the cooking time in some cookbooks is 20mins but the longer you cook it, the better the taste. Don’t forget you need to add plenty of salt, it’s important for the taste. Don’t cook when you’re in love *tehehehe* – ENJOY!
